CREAMY VEGAN DHAL

Creamy vegan dhal… it just sounds warming! I am going to make this a quick one because I always get such a high demand for my Creamy Vegan Dhal recipe! And plus I said ages ago that I would share it, sorry it has taken me a while (don’t forget I have two children and a lovely fiance that need me endlessly too 🙂 ) So thanks for being patient.

Dhal is a perfect meal any time of the year but during winter it seriously warms the soul. You can eat it by itself, with rice, with steamed corn ontop, with quinoa, with veggies, with salad, with pasta, with baked spuds, with spiralized veggies, with steamed veggies, honestly, the options are endless.

It is also a great post-workout meal being so high in protein and if you pair it with a kale spinach salad and some quinoa or brown rice, you have yourself a seriously high protein nutrient dense meal!

Like I mentioned, I’m am going to keep this short so here it is below, the recipe to my Creamy Vegan Dhal 🙂

YOU WILL  NEED

2 cups yellow lentils (chana are my fave)

6 cups water (more if needed)

4 garlic cloves, minced

1 tsp. cumin

1 tsp. smoked paprika

1 tbsp. curry powder

1 tsp. ground coriander

2 tsp turmeric

1 tsp mustard seeds

3 bay leaves

1 tsp rock or sea salt (not table salt)

fresh coriander or coconut (garnish)

1 can coconut milk

1 can tomatoes

Jasmine rice

Lime juice


METHOD

Add all ingredients except the coconut milk and tomatoes into a large pot, bring this to the boil then turn down to simmer then add the coconut milk and tomatoes, stir well.

Continue to simmer, stirring occasionally for 30 minutes (you can make this process faster with a higher heat and constant stirring)

When lentils are soft and the consistency is creamy the mixture is ready, you can add more water if you would like it runnier.

Remove the bay leaves, serve with steamed jasmine rice. Squeeze with lots of lime juice! Topped with fresh avocado is so good too!
